Whole kitchen en su Propuesta Salada para el mes de julio nos invita a preparar todo un clásico de la comida contemporánea como lo es la Hamburguesa.
Nunca había probado a hacer la hamburguesa en casa, dado que habiendo tantas ofertas en el mercado siempre compraba el pan y las hamburguesas ya prontas. Debo decir que quedé verdaderamente satisfecha con el resultado, decidí hacerlas minis porque hace algún tiempo que tenia la idea de hacer panecillos para apertitivos en la casa, asi que fue una óptima ocasión para aprovechar esta receta .
Aqui dejo la receta y espero que la disfruten tanto como yo.
Para 10 mini hamburguesas
Para los Panecillos de hamburguesas
Ingredientes:
Agua – 70 gr
Leche – 90 gr
Huevo - 1
Mantequilla – 15 gr
Miel - 1 cucharadita
Harina de panadería – 300 gr
Levadura seca de panadería – 3 gr
Para el glaseado
Leche
Semillas de sésamo
Preparación:
Podemos hacerlo de dos formas, con un robot eléctrico o manualmente, si la hacemos con un robot, pondremos todos los ingredientes en el bowl de nuestro robot junto con el el gancho de amasar y lo dejamos unos 8 minutos a velocidad baja, (si lo hacemos manual, ponemos todos los ingredientes en un bowl y amasamos con las manos unos minutos hasta que todos los ingredientes estén integrados y la masa se despegue) en ambos casos, sacamos la masa y terminamos amasando a mano unos minutos más (yo amasé unos 8 minutos más).
Engrasar con un poco de aceite un bowl y dejamos reposar la masa dentro bien tapada, en un lugar cálido y lejos de corrientes, durante 1 hora aproximadamente o hasta que casi triplique su volumen.
Transcurrido este tiempo, ponemos un poco de harina en la mesa que vayamos a trabajar, volcamos la masa y amasamos un par de minutos para eliminar el aire que ha cogido la masa.
Pesamos la masa y la dividimos en 10 porciones.
Hacemos bolas con cada una de ellas y las aplastamos ligeramente, la vamos colocando sobre una bandeja de hornear, las pintamos con leche y le espolvoreamos el sésamo, las tapamos con un paño de cocina y las dejamos levar hasta que doble su volumen. Espaciar los bollitos, para que no se junten en este último proceso.
Ponemos en nuestra bandeja de hornear un cuenco con agua caliente y los panes, lo introducimos en el horno, precalentado a 220º y lo dejamos hornear por unos 18 minutos aproximadamente.
Para las hamburguesas:
Ingredientes:
Pan rallado – 3 cucharadas
Perejil fresco picado – 6 ramitas
Mostaza de Dijon – 2 cucharaditas
Carne de ternera picada – 400 gr
Huevos – 1 grande
Cebolla – 1 pequeña
sal y pimienta
aceite de oliva
Preparación:
Picar fino el perejil y la cebolla y ponerlo junto con la mostaza y la carne en un cuenco. Cascar el huevo encima y añadir una pizca de sal y de pimienta.
Con las manos limpias, amasamos y mezclamos todo muy bien.
Dividir la masa en 10 partes y moldear y aplastar cada una de ellas en una torta redonda de un grosor de 2 centímetros.
Riegar las hamburguesas con un chorrito de aceite, cubrir con papel transparente y guardarlas en el refrigerador para que cojan consistencia, al menos una hora.
Salsa BBQ
Ingredientes:
Aceite – 2 cucharadas
Cebolla - 1 pequeña finamente picada
Vinagre de vino tinto - 3 cucharaditas
Azúcar moreno - 1 cucharada
Salsa de tomate – 80 ml
Salsa worchestershire - 2 cucharaditas
Salsa de soja - 2 cucharaditas
Preparación:
Calentamos el aceite en una sartén, freímos la cebolla unos 5 minutos o hasta que esté ligeramente dorada, añadimos el vinagre, el azúcar, el tomate y las salsas, removemos y llevamos a ebullición.
Bajamos el fuego y dejamos cocer fuego lento durante unos 10 minutos.
Lo sacamos todo y lo trituramos, lo dejamos enfriar y lo guardamos en un pocillo.

Whole kitchen in its Savoury Proposal for the month of July invites us to prepare a classic of the contemporary food: the burger.
I've never tried to make the hamburger at home, since there are so many deals in the market. I’ve always bought bread and burgers ready to eat. I must say that I was truly pleased with the result, I decided to make mini burgers since for a while I wanted to make little buns as appetizers or finger food, so it was an excellent chance to make this recipe.
Here is the recipe and I hope you enjoy it as much as I did.
Makes 10 mini burgers
For the hamburger bread
Ingredients:
Water - 70g
Milk - 90g
Egg - 1
Butter - 15g
Honey - 1 tsp
Bakery Flour - 300g
Dry Yeast - 3g
To Brush
Milk
Sesame seeds
Directions:
We can do this in two ways, with an electric whisker or manually, if we make a robot, we will put all the ingredients in the bowl of our robot together with the hook and let it knead for about 8 minutes at low speed, (if manually, put all ingredients in a bowl and knead with your hands a few minutes until all ingredients are integrated and the dough pulls away) in both cases, we get the dough and finish kneading by hand a few more minutes (I did it for about 8 minutes.)
Grease with a little oil a bowl and let dough rest in tightly covered, in a warm place, for about 1 hour or until almost triple in volume.
Turn on oven to 220ºC.
After this, we flour a surface and put the dough and knead a couple of minutes to remove air.
We weighed the dough and divide into 10 portions.
Make little balls with each of them and crush them slightly, place them on a baking tray, then brush them with milk and sprinkle sesame seeds, then cover with a clean towel and let rise until doubled in volume. Space the buns so they do not come together in the latter process.
Put on the baking tray a bowl with hot water. Take the tray with the breads and the bowl with the hot water to the oven, and bake them for about 18 minutes.
For the burgers
Ingredients:
Bread crumbs - 3 tbsp
Parsley fresh chopped - 6 sprigs
Dijon mustard - 2 tsp
Minced beef - 400g
Eggs - 1 large
Onion - 1 small
salt and pepper
olive oil
Directions:
Finely chop the parsley and onion and put it together with the mustard and the meat in a bowl. Crack the egg on top and add a pinch of salt and pepper.
With clean hands, knead and mix thoroughly.
Divide dough into 10 parts and shape and flatten each into a round cake two inches thick.
Pour some oil over the burgers, cover with cling film and store in the refrigerator to get consistency, at least one hour. Then cook as you prefer.
BBQ Sauce
Ingredients:
Oil - 2 tbsp
Onion - 1 small finely chopped
Red wine vinegar - 3 tsp
Brown sugar - 1 tbsp
Tomato sauce - 80 ml
Worchestershire sauce - 2 tsp
Soy sauce - 2 tsp
Directions:
Heat the oil in a pan, fry the onion for 5 minutes or until lightly browned, add vinegar, sugar, tomato sauce, stir and heat to boiling.
Reduce the heat and let it cook over low heat for about 10 minutes.
Crush all ingredients and place the sauce in a bowl, let it cool.
