Galletas crujientes de Chocolate (Crunchy chocolate biscuits)


Aprovechando estos dias lluviosos desde esta parte del mundo, buscaba una excusa para encender el horno y comenzar a disfrutar las horas de té durante las tardes lluviosas con un delicioso dulce.
Esta vez, decidí de probar esta receta, la cual encontré en el sitio tastefood.
La consistencia de las galletas es deliciosa, muy chocolatosa e ideal para acompañar una taza de leche o de té. Y genial para comenzar esta semana.

Aprovecho de ponerme al día con el Cookbook challenge e includo estas galletas como receta de la semana 43.

Aquí les dejo la receta.


Ingredientes:

Chocolate amargo – 400 gr + 200 gr en trozos para decorar
Azúcar – 340 gr
Mantequilla – 55 gr
Harina – 60 gr
Huevos – 4
Polvos de hornear – 1 tsp
Extracto de vainilla – 2 tsp
Sal – ½ tsp

Preparación:
Derretir a baño maría 400 gr de chocolate con la mantequilla. Retirar del fuego. Batir el azúcar con los huevos hasta obtener una mezcla cremosa. Agregar el chocolate derretido con la mantequilla. Mezclar. Agregar el extracto de vainilla. Mezclar bien.
Cernir en un bowl la harina, con la sal y los polvos de hornear. Agregarla a la mezcla de chocolate,mantequilla, azúcar y huevos. Mezclar delicadamente y agregar los trozos de chocolate. Poner en el refrigerador por al menos 30 minutos. Mientras tanto encender el horno a 180ºC.
Cubrir una bandeja con papel mantequilla. Distrubuir la masa sobre la bandeja con una cuchara.
Llevar al horno por unos 20 minutos.

Ingredients:
Bitter Chocolate - 400 gr + 200 gr in chunks
Sugar - 340 gr
Butter - 55 gr
Flour - 60 gr
Eggs - 4
Baking powder - 1 tsp
Vanilla extract - 2 tsp
Salt - ½ tsp

Directions:

Melt 400g of chocolate with the butter in a double boiler over simmering water. Remove from heat. Beat sugar with eggs until obtain a creamy mixture. Add the melted chocolate with the butter then add the vanilla extract and mix well.
Sift flour into a bowl with salt and baking powder. Add it to the chocolate mixture, butter, sugar and eggs. Mix gently and add the chocolate chunks. Put in refrigerator for at least 30 minutes. Meanwhile preheat the oven to 180 º C.
Line a baking tray with parchment paper. Drop the batter on the tray with a spoon.
Bake for about 20 minutes.

Carpaccio de res (Beef Carpaccio)


Y finalmente ha llegado el viernes! Estos días he estado a full con el trabajo por lo que con poco tiempo para la cocina, pero vamos que cada tanto podemos preparar algo sabroso y que requira sólo unos minutos para preparar.
Esta semana, para el Cookbook challenge, tenemos como tema “Crudo” y dado quelos viernes sagradamente me gusta preparar una cena principalmente a base de antipastos y picoteos, he decidido preparar este delicioso carpaccio de res.
Bastan pocos minutos para prepaparlo, y seguramente que logra la aceptación de los comensales.

Aquí les dejo la receta.

Para 2 personas
Ingredientes:
Carne de res – 200 gr cortada muy finamente de filete, sin grasa
Parmesano – A gusto
Alcaparras – A gusto
Limón – 1 (el jugo)
Aceite de oliva – 60 ml
Sal
Pimienta

Preparación:
Generalmente la carne se pide ya cortada en carnicería.
Preparar como primera cosa el aliño, mezclando el jugo de limón con el aceite, la sal y la pimienta.
Poner en un plato los filetes de res y sobre éstos ponemos el aliño. Luego agregamos el queso parmesano y las alcaparras. Podemos decorar también con rúcola, dependiendo de los gustos.

And Friday has finally arrived! These days I have been full at work so I didn’t have enough time for cooking, but sometimes we can prepare something tasty that requires only few minutes to prepare.
This week, for the Cookbook challenge, we have as theme "Raw" and since every Friday I like to prepare a meal, mainly consisting of antipasti and appetizers, I decided to prepare this delicious beef carpaccio.
It’s great because only requires a few minutes, and will get the acceptance of the guests for sure.

Here is the recipe.

Serves 2
Ingredients:
Beef - 200g fillet, sliced finely with no fat
Parmesan
Capers
Lemon - 1 (Juice)
Olive oil - 60 ml
Salt
Pepper

Directions:

Usually the meat comes already sliced, otherwise ask to the butcher to cut it for carpaccio use.
First thing, prepare the dressing, mixing lemon juice with oil, salt and pepper.
Place fillets on a plate and pour the dressing all over. Add the Parmesan cheese and capers. We can also decorate with rocket salad, depending on taste.
And that’s it!

Empanadas Chilenas (Chilean Empanadas/Meat pie)


Finalmente estoy de vuelta! Luego de casi un mes entre vacaciones, trabajo, visitas, etc volví para ponerme al día en la cocina y con todos los blog... El verano ya está terminando y desde la otra parte del mundo está apenas comenzando la primavera, lo que me hace recordar una de las celebraciones más esperadas de mi gente, el 18 de septiembre! Para celebrarlo y recordarlo decidí este año de preparar unas ricas empanadas, plato típico e infaltable en la mesa de los chilenos, que consiste en una masa rellena con carne, cebolla, huevos, aceitunas (todo junto llamado pino) y que los chilenos gustan como plato de entrada en la espera que el asado este pronto.
Aquí les dejo la receta para continuar con las celebraciones. Esta receta la saqué tal cual del sitio Recetas Gratis.

Para 10-12 Empanadas
Ingredientes:
Masa:
1 Kilo de Harina.
2 Cucharadas rasas de polvos para hornear.
200 Gramos manteca de cerdo.
1 Cucharadita rasa de sal.
1 Huevo.
1/2 Litro de Leche.

Pino:
1/2 Kilo de carne de res molida.
1 kilo de Cebollas.
1 vaso vino blanco.
5 Cucharadas de aceite
4 Huevos cocidos (duros), trozaditos.
Aceitunas (olivas).
Pasas (uvas secas dulces) (optativo).
Ají color (paprika).
Sal.
Aliño completo.
Obs. sobre "aliño completo"; Esto es una mezcla de muchos condimentos en polvo, se distinguen el orégano, aji color y comino. Se puede reemplazar por similares y a gusto, o no está nada mal agregar un par de tabletas de concentrado de carne.

Preparación:

Masa:
Poner la harina mezclada con la sal y con el polvo de hornear en una superficie para amasar. Hacer un círculo con la harina y poner en el centro la manteca tibia y previamente derretida en sartén, agregar un huevo y la leche paulatinamente para comenzar a mezclar suavemente con las manos hasta lograr una masa más homogénea, asi dejar reposar unos minutos para luego comenzar a amasar. Si la consistencia es demasiado seca se continúa suavizando con leche, y si le hemos puesto demasiada leche podemos poner más harina.
Luego de amasar sacamos trozos de masa y hacemos esferas para volver a amasar y hacer discos de masa (hasta 25 cms. de diámetro).
Pino:
Picar la cebolla medianamente fina y freirla a fuego medio durante 20 minutos revolviendo e incorporando el vino,(Obs:para hacer la cebolla más digestiva aconsejo antes de cocinar lavarla y escurrirla bien, luego agregar una cucharadita de azucar y en cualquier receta cocinarla siempre antes por si sola no menos de 15 minutos), luego salpimentar a gusto y agregar los condimentos y la carne para dejar en cocción a fuego medio hasta que la carne esté apenas cocida (5 a 7 minutos aprox.).
Luego en cada disco de masa poner un poco de pino escurrido (sacar un poco el líquido), una aceituna, un trozo de huevo y dos pasas. Al cerrar el disco aconsejo pasar una pincelada de Agua en la juntura, asi evitamos se abra. Luego de cerrar la empanada en la forma que se desee le damos una pincelada encima con un poco de huevo batido crudo que preparamos exclusivamente para eso. Además le damos un par de pinchazos para que luego no acumule aire al hornear.
Poner a hornear a fuego medio unos minutos hasta que las veamos doraditas, (20 a 30 minutos con el horno previamente calentado).

Finally I’m back! After almost a month between vacations, work, visits, etc. I’m back to catch up in the kitchen and all the blog ... Summer is ending and from the other side of the world is just beginning the spring, which makes me remember one of the most beautiful celebrations of my people, the national day, 18 of September! To celebrate it I decided this year to prepare empanadas, and typical Chilean dish consisting of a kind of a pie filled with meat, onions, eggs and olives, that you can’t miss during this celebrations, mostly we eat it as an appetizer while we wait for the barbecue to be ready.
Here is the recipe to continue the celebrations. I got this recipe from the website Recetas Gratis.

Empanadas 10-12
Ingredients:
Dough Pie:
Flour – 1 Kg
Baking powder - 2 tbsp
Lard – 200 gr
Salt – 1 tsp
Eggs - 1
Milk – 500 ml

Pino (the filling):

Ground beef – 500 gr
Onions – 1 kg
White wine – 1 cup
Oil- 5 tbsp
Eggs – 4 hard boiled
Olives
Raisins (optional).
Chili color (paprika).
Salt

Directions:
Dough:
Put the flour mixed with salt and baking powder on a surface for kneading. Make a well in the centre and add warm the warm lard previously melted in a pan, add egg and milk gradually to begin mixing gently with hands until you get a homogeneous dough, so let stand a few minutes and then start to knead. If consistency is too dry add more milk to soften, and if we put too much milk you can put more flour. Knead for at least 20 minutes.
Divide the dough into 10 – 12 pieces and form a ball with each of them. Flatten out each ball and lay it down on the surface, giving to the dough a circle shape (up to 25 cm. of diameter).

Pino - Filling:

Chop onion and fry at medium heat for 20 minutes, stirring and adding the wine, (Note: to make more digestive onion I recommend washing before cooking and drain well, then add a teaspoon of sugar and cooking in any recipe before at least for 15 minutes), then add salt and pepper to taste and add seasonings finally add the meat and cook it over medium heat until meat is just cooked (5-7 minutes).
Then on each circle of dough, put a little drained filling, an olive, a piece of egg and two raisins. When closing the dough brush the edges with water, so avoid open. After closing the empanada, brush it with a beaten egg. Make a few holes with a fork over the surface.
Bake the empanadas for a few minutes over medium heat until browned (20-30 minutes in preheated oven.)
