Crêpes Suzette


Whole Kitchen en su propuesta dulce para el mes de Febrero nos invita a preparar un clásico de la gastronomía francese, los crêpes.

Comienza una nueva semana y qué mejor que iniciarla dulcemente! Debo decir que los crêpes son uno de mis preferidos por su versatilidad, se pueden preparar platos fantásticos con ingredientes tan simples. Para esta ocasión decidí preparar un crêpe suzette, un típico postre francese que destaca por su salsa y sabor cítrico.
Espero que lo disfruten.

Ingredientes:

Huevos – 2
Harina – 125 gr
Leche – 250 ml
Azúcar – 30 gr
Licor – 1 cucharadita de licor de naranja u otro
Sal – una pizca

Para la salsa:
Azúcar – 8 cubos de azúcar
Mantequilla – 70 gr
Naranjas – 2
Limón – 1
Grand Marnier o licor de naranja – 1 vaso

Preparación:
Batir los huevos con el azúcar y la sal. Agregar la harina, la leche y mezclar. Agregar 20 gr de mantequilla derretida y agregar el licor. Dejar reposar por 2 horas en el refrigerador.
Engrasar un sartén con la mantequilla y agregar un cucharón de la mezcla, moviendo el sartén circularmente para que quede parejo. Cuando la mezcla comenzará a secarse, levantar los bordes con una espátula y girar el crêpe. Cocinar por otro minuto hasta que esté dorada. Repetir el procedimiento con el resto de la mezcla. Reservar.
Preparar la salsa, pasar los cubos de azúcar sobre la piel de la naranja y del limón.Mientras tanto, poner la mantequilla en el sartén a fuego bajo y agregar los cubos de azúcar, dejar que la mantequilla se derrita. Exprimir las naranjas y el limón, pasando el jugo por un colador y agregarlo a la mantequilla. Agregar el licor. Sucesivamente se procede a bañar los crepes, mejor si se hace uno a uno, poniéndolo abierto y luego doblándolo en el sartén, dejando que se impregne de la salsa. Continuar con el resto de los crêpes.
Se puede también flambear los crêpes.
Servir. En este caso los acompañé con un poco de helado.

A new week begins and there isn’t a better way to start it than doing it sweetly. I must say crêpes are one of my favourites for its versatility, you can prepare fantastic dishes just using simple ingredients. For this occasion I decided to prepare a crêpe suzette, a typical French dessert known for its salsa and that citrus flavour.
Hope you enjoy it.

Ingredients:
Eggs - 2
Flour - 125 g
Milk - 250 ml
Sugar - 30 g
Liqueur - 1 teaspoon orange liqueur or other
Salt - a pinch

For the sauce:
Sugar - sugar 8 cubes
Butter - 70 g
Oranges - 2
Lemon - 1
Grand Marnier or orange liqueur - 1 cup

Directions:
Beat eggs with sugar and salt. Add flour, milk and mix. Add 20 grams of melted butter and add the liqueur. Let stand for 2 hours in the refrigerator.
Grease a skillet with butter and add a ladle of the mixture, shaking the skillet so the mixture comes uniform. Once the mixture begins to dry, lift the edges with a spatula and turn the crêpe. Cook for another minute until golden. Repeat with the remaining mixture. Reserve.
Prepare the sauce, pass the sugar cubes over the skin of the orange and lemon. In the meantime, place butter in skillet over low heat and add the sugar cubes, until butter is melted. Squeeze the oranges and lemon, passing the juice through a sieve and add it to the butter. Add liquor.
Then, proceed dipping the crêpes in the sauce, it would be better if is done one by one, so place the crêpe in the pan and then fold it in half and half again. Continue with the remaining crêpes.
You can also flambé crêpes.
Serve. In this case, I chose to accompanied with some ice cream.

Pierogi (Ravioles típicos de Polonia) Pierogi (Typical Polish Ravioli)


A fines del año pasado tuve que viajar a Varsovia por trabajo. Tuve la suerte de poder viajar con mi maridito así además de trabajar tuvimos la oportunidad para recortar un poco de tiempo para conocer esta hermosa ciudad.
Varsovia es una ciudad hermosa, que mantiene su historia con la modernidad, es un país con una cicatriz de dolor aún abierta después de la guerra –al menos fue mi humilde percepción-, pero que destaca por sus colores y la voluntad de su pueblo de seguir adelante. Se destaca su cocina sencilla pero deliciosa, creando con pocos ingredientes platos nutritivos y maravillosos, característica admirable de aquellos países que han pasado por periodos horribles de poco abastecimiento y durante los cuales las dueñas de casa lograban crear y llevar a la mesa platos que destacaban por la simplicidad de los ingredientes pero que al mismo tiempo lograban dar la nutrición necesaria a la familia.
Durante nuestro estadía en Varsovia, tuvimos la oportunidad de probar un delicioso plato llamado “Pierogi” que consiste en ravioles rellenos. La masa es muy simple y el relleno varía, los encontré rellenos de setas, ricotta, chucrut, papas, cebollas, etc.
A mi marido le encantaron, asi que desde que volvimos, me hacía entender “indirectamente” cuánto le gustaría comer nuevamente los famosos Pierogi de Varsovia, asi que así, esta humilde cocinera y esposa, decidió ponerse manos a la obra y cumplir el antojo de su marido.

Aquí les dejo la receta (esperando que el pueblo polaco no se ofenda por haber intentado reproducir esta riquísima receta) y espero que la disfruten tanto como nosotros.

Ingredientes:

Para la masa
Harina – 2 ½ tazas
Huevos – 1
Agua – Tibia, de ½ a ¾ de taza
Sal – una pizca

Para el relleno
Papas – 5 grandes
Cebollas – 2 medianas cortadas en trocitos
Queso – Gouda, o el que prefieran rallado
Sal
Pimienta
Mantequilla/aceite – 3 cucharadas

Mantequilla, Aceite, salsas, de vuestra preferencia

Preparación:
Lavar y pelar las papas, cocerlas y hacerlas puré. Mientras tanto caramelizamos la cebolla en la mantequilla o el aceite hasta que esté dorada. Mezclar la cebolla con el puré y el queso y salpimentar.

Mezclar todos los ingredientes de la masa hasta que se uniforme. No amasar tanto, ni agregar tanta agua, hay que agregar sólo la agua suficiente para que se junten todos los ingredientes.
Poner a reposar la masa tapada con una paño de cocina por no más de 30 minutos.
Extender la masa en una superficie enharinada, no debe resultar muy gruesa, si no más bién lo suficientemente fina permitiendo que no se rompa la masa.
Cortar la masa en círculos (se puede hacer con un vaso de vino) y agregar el relleno. Sellar bien los ravioles (yo lo hice pincelando un poco de agua en los bordes) en modo de evitar que se abran durante la cocción.
Hervir suficiente agua en una olla con un poco de sal. Cuando hierva poner los Pierogi, los cuales irán al fondo de la olla para luego subir a la superficie, cuando los Pierogi suban a la superficie continuar la cocción por otros 4 minutos. Transferir en un plato y agregar un poco de aceite de oliva, o bien mantequilla derretida con setas, cebolla, o lo que quieran, yo agregué salsa de tartufo y quedó delicioso.

Pierogi (Typical Polish Ravioli)


By the end of last year I had to travel for work to Warsaw. I was lucky enough because I had the chance to travel with my hubby so while I was working we had the opportunity to cut a little time to explore this beautiful city.
Warsaw is a beautiful city that keeps its history mixed with modernity, is a country with an open scar of pain since the war, (at least it was my humble perception) but noted for its colours and the will of his people to move forward. Stands out by its simple but delicious cuisine, which creates with a few ingredients nutritive and wonderful meals, admirable characteristic of those countries that have gone through terrible periods of food shortage and during which housewives were able to create and bring to the table dishes that stood out for the simplicity of the ingredients but at the same time managed to give the necessary nutrition for the family.
During our stay in Warsaw, I had the opportunity to taste a delicious dish called "Pierogi" a kind of ravioli dish. The dough is very simple and filling varies, I found them stuffed with mushrooms, ricotta cheese, sauerkraut, potatoes, onions, etc.
My husband loved it, so since we got back, he was constantly dropping the hint about how much he would like to eat again the famous Pierogi from Warsaw, so well, this humble cook and wife, decided to put her hands on work and to fulfill the craving of her husband.

Here is the recipe (hoping not to offend Poland for my attempting to replicate this delicious recipe) and I hope you enjoy it as much as we did.

Ingredients:
For the dough
Flour - 2 ½ cups
Eggs - 1
Water - Lukewarm, ½ to ¾ cup
Salt - a pinch

For the filling

Potatoes - 5 large
Onions - 2 medium diced
Cheese - Gouda, or whatever you prefer, shredded
Salt
Pepper
Butter / oil - 3 tablespoons

Butter, oil, sauces, your choice

Directions:
Wash and peel potatoes, boil and mash them. Meanwhile caramelize onions in butter or oil until golden. Mix the onions, potatoes puree with cheese and season.

Mix all ingredients for the dough until everything comes together . Don’t over and do not add too much water, add just enough water to get together all ingredients.
Put the dough covered with a tea towel and let rest for no more than 30 minutes.
Roll out the dough on a floured surface, should not be too thick, but rather allowing fine enough so it doesn’t break.
Cut dough into circles (you can do with a glass of wine) and add the filling. Seal the ravioli (I did brush a little water on the edges) in a way to avoid a mess and they open during cooking.
Boil enough water in a pot with a little salt. When it boils add the Pierogi, which will go to the bottom of the pot and then will go back to the surface; when the Pierogi rise to the surface continue cooking for another 4 minutes. Transfer to a plate and add some olive oil or melted butter with mushrooms, onions, or whatever you want, I added truffle sauce and it was delicious.

Crema Catalana


Uno de mis restaurantes preferidos en mi ciudad natal, Santiago, se llama “La Cocina de Javier” donde hemos pasado memorables momentos con mi familia, graduaciones, aniversarios, cumpleaños, y tantas innumerables situaciones por el sólo hecho de estar juntos y celebrar. Javier Pascual, para quienes no lo saben es un conocido Chef Vasco en Santiago, recuerdo que participaba hasta en programas televisivos con mucho éxito. Una cosa que me gustaba tanto de ir a su restaurant es que en un momento de la cena, el mismo Javier dejaba todo en cocina e iba a saludar a todos y cada uno de sus comensales, preocupándose por cada uno y asegurándose que todo estuviese bien, haciéndonos sentir como si estuviéramos en nuestra propia casa. Era grandioso sentir ese acento, y ver a este señor de unos 70 años con su boina negra y su traje de chef, es un grande autor en cocina y fue gracias a él que me enamoré de la cocina española.
Cada vez que vuelvo a Chile, mi papá, sabiendo que la Cocina de Javier es mi preferida, reserva una o dos veces una cena ahí, y en la espera de volver a degustar esos magníficos platos, me consuelo con esta delicia de Crema Catalana y aprovechando que mi maridito me regaló el soplete de cocina, no me aguanté para estrenarlo.
Espero que la disfruten tanto como yo. Aquí les dejo la receta.

Para 2 – 3 personas (dependiendo del tipo de molde que usen)
Ingredientes:
Leche – 500 ml
Huevos – 4 yemas
Azúcar – 8 cucharadas
Canela - 1 palito
Limón - ralladura de 1/2
Naranja - ralladura de 1/2
Vainilla - 1 cucharadita de extracto
Maizena – 1 cucharada
Azúcar de caña – cuanto quieran, yo usé unas 4 cucharadas

Preparación:
En una olla ponemos a calentar la leche (de los 500 ml reservamos a parte un poco de leche para mezclarla con la maizena, basta 1/3 de vaso de vino) con la canela, la vainilla, la cáscara de limón y de naranja. Hervir y dejar infusionar por unos 5 minutos. Mientras tanto batir las yemas con el azúcar hasta que resulte espumoso. Agregamos la leche caliente, colándola a la mezcla de yemas y agregamos también la maizena mezclada con la leche. Mezclamos bien y ponemos todo nuevamente en la olla a fuego bajo. Cocinar revolviendo continuamente hasta que habrá adquirido consistencia.
Poner la crema en los pocillos, dejar a enfriar a temperatura ambiente antes de llevar al refrigerador.
Refrigerar. Yo la dejé toda la noche. Luego antes de servir ponemos el azúcar de caña en la superficie y con el soplete la caramelizan. Servir.

One of my favorite restaurants in my hometown, Santiago, is called "La Cocina de Javier" where we spent great times with my family, graduations, anniversaries, birthdays, and many countless situations for just being together and celebrate. Javier Pascual, for those who do not know is a popular Basque Chef in Chile, I remember that he used to make several appearances in TV shows with great success. One thing I liked so much about going to his restaurant is that in a certain time of dinner, the same Javier was stopping everything in the kitchen in order to greet each of his guests, taking care of everyone and making sure everything was OK , making us feel like we were in our own home. It was great to feel that accent, and see this gentleman in his 70 years with his black beret and his chef outfit, he is a great author in the kitchen and it was through him that I fell in love with Spanish cuisine.
Each time I return to Chile, my dad, knowing that Javier's Kitchen is my favorite, reserves a table there, and waiting to return to enjoy those great dishes, I console myself with this delicious Crema Catalana taking the occasion that my hubby just bought for me a kitchen torch.
I hope you enjoy it as much as I did. Here is the recipe.

For 2 to 3 people (depending on the type of mold used)
Ingredients:
Milk - 500 ml
Eggs - 4 egg yolks
Sugar - 8 tablespoons
Cinnamon - 1 stick
Lemon - zest of 1/2 lemon
Orange - zest of 1/2 orange
Vanilla - 1 tsp of vanilla extract
Cornstarch - 1 tablespoon
Sugar cane - all you want, I used about 4 tablespoons

Directions:

In a pot, heat the milk (reserve aside a little milk to mix with cornstarch, just like 1/8 cup) with cinnamon, vanilla, lemon zest and orange juice. Boil and leave to infuse for 5 minutes. Meanwhile beat the egg yolks with sugar until it becomes frothy. Add hot milk (strain it first) to the eggs mixture and also add the cornstarch mixed with milk. Mix well and put everything back into the saucepan over low heat. Cook stirring constantly until consistency will be acquired.
Pour the cream into the moulds, let cool at room temperature before taking into the refrigerator.
Refrigerate. I left it overnight. Then before serving put the sugar cane on the surface and caramelize with the torch. Serve.

Bavarois de Chocolate y Naranja - Orange and Chocolate Bavarian Cream

Para celebrar San Valentín decidí de preparar un postre no muy dulce pero que fuese al mismo tiempo goloso. Buscando y buscando encontré esta receta que salió en una revista aquí en Italia, un bavarese de chocolate y naranja, la única cosa que cambié fue no hacerlo tipo màrmol.
Desde que conocí a mi marido, digamos que esta fecha ha comenzado a tomar sentido en mi vida, tal vez porque antes cada vez que llegaba San Valentín esta fecha coincidía con mi época de soltería...pero bueno todo depende también del tipo de compañía, y es que junto a mi maridito cualquier fecha es una excusa para celebrar con romanticismo.
Con esta receta doy mi aporte al HEMC # 51 San Valentín y al Cook Book Challenge Week #4 “Love”. Espero que lo disfruten.

Ingredientes:
Leche – 600 ml tibia
Huevos – 6 yemas
Harina – 20 gr
Azúcar – 200 gr
Crema fresca para batir – 300 ml
Naranjas – Ralladura de 2
Chocolate amargo – 100 gr y otro poco para decorar
Gelatina en hojas – 20 gr

Preparación:
Poner la gelatina a remojar en un pocillo con agua fría. Mientras tanto batir las yemas con el azúcar y la harina hasta que quede una mezcla espumosa. Unir poco a poco la leche, mezclar bien y poner todo en una olla a fuego bajo hasta que empiece a espesarse. Agregar la gelatina bien estrujada y mezclar bien hasta que se disuelva en la mezcla. Dividir la mezcla en dos bowls y en una agregar la ralladura de naranja y en la otra el chocolate amargo cortado en trocitos. Mezclar bien. Dejar enfriar. Mientras tanto batir la crema hasta que haya doblado su volumen dividirla e incorporarla en igual cantidad a la mezcla de naranja y a la de chocolate. Poner las dos mezclas en un molde y llevar al refrigerador por al menos 8 horas.
Decorar con chocolate y servir.

To celebrate Valentine's Day I decided to prepare a dessert that wasn’t too sickly sweet but at the same time tasty. Searching and searching I found this recipe which in an Italian magazine, a Bavarian cream of chocolate and orange, the only thing I changed was not marbling it.
Since I met my husband, Valentine’s Day makes finally sense in my life, maybe because before meeting my husband every Valentine’s coincided with a time of my life of being single ... but everything depends on the quality of the company, and the thing is that with my hubby any time is an excuse to celebrate romance.
With this recipe I give my contribution to the HEMC # 51 Valentine's Day and to the Cook Book Challenge Week # 4 "Love". Hope you enjoy it.

Ingredients:
Milk - 600 ml warm
Eggs - 6 egg yolks
Flour - 20 g
Sugar - 200 g
Fresh whipping cream - 300 ml
Orange - Zest of 2
Dark chocolate - 100 g and some for garnish
Leaf gelatine - 20 g

Directions:
Put the gelatine to soak in a bowl with cold water. Meanwhile beat the egg yolks with sugar and flour until creamy. Add the milk gradually, mix well and put everything in a saucepan over low heat until it begins to thicken. Add gelatin and mix thoroughly wrung until dissolved in the mixture. Divide into two bowls the mixture and add the zest of the oranges to one bowl and to the other one add the dark chocolate cut into small pieces. Mix well. Allow to cool. Meanwhile whip the cream until it has doubled in size and divide it equally into the mixture of orange and into the mix of chocolate. Put the two mixtures into a mold and refrigerate for at least 8 hours.
Garnish with chocolate and serve.

Risotto de Radicchio - Radicchio Risotto

En estos días de frio, el cuerpo se pone regalón, y hay que colmarlo con comidas un poco más calóricas. El risotto es uno de mis platos favoritos, porque simplemente cumple con 4 requisitos fundamentales a) es rápido de preparar, b) es ideal para cuando hay invitados porque sacia bastante c) es económico (claro siempre que no usemos ingredientes que cuesten tanto) y d) es muy versátil, basta un poco de imaginación y podemos crear un risotto con lo que encontremos en casa (siempre con justo juicio!!).
Aprovechando que es periodo de radicchio, decidí preparar un risotto al radicchio. Sinceramente, antes de venir en Italia desconocía su existencia, y muchas veces el radicchio tipo de Chioggia (achicoria roja) lo confundía con el repollo morado (algo que echo tanto de menos y que aún me es difícil de encontrar).
Con esta receta doy mi aporte al Cook Book Challenge semana #3 “Rice/Noodles”.
Aquí les dejo esta receta.

Para 2 personas
Ingredientes:
Arroz – 180 gr Tipo Carnaroli
Radicchio – la variedad que deseen, de Chioggia, Treviso, etc. y la cantidad depende del gusto. Yo usé unas 8 hojas del radicchio, cortadas en trocitos.
Vino blanco – ½ vasito
Sal
Pimienta
Queso Gorgonzola – a placer. Yo usé unas 4 cucharadas. Es opcional.
Queso Parmesano – 2 cuchardas
Caldo vegetal – 1 litro (mantener caliente)
Cebolla – 1 pequeña cortada en trocitos
Aceite de Oliva – 2 cucharadas
Mantequilla – 20 gr

Preparación:
En una olla calentamos el aceite de oliva y agregamos la cebolla. Cocinar hasta que esté dorada. Agregar el radicchio y cocinar hasta que se ablande. Agregar el arroz y saltear. Luego versamos el vino y dejamos que se esfume. Sucesivamente agregamos uno o dos cucharones de caldo y comenzamos a cocinar el arroz por el periodo de cocción indicado (unos 15-18 minutos). No hay que dejar que el arroz se seque, asi que hay que mantenerlo siempre bañado con el caldo. Pocos minutos antes que termine la cocción sal pimentamos y agregamos la mantequilla, el queso gorgonzola y el parmesano. Dejamos reposar 2 minutos antes de servir.

In these cold days, the body claims comfort and we need to give it comfort meals. Risotto is one of my favourites because meets 4 fundamental requirements a) is quick to prepare, b) is great for when you have guests because it feeds a crowd c) is inexpensive (of course if we do not use pricy ingredients) d ) is very versatile, just a little imagination and we can create a risotto with whatever we find at home (with fair judgement!).
Since is the season for radicchio, I decided to prepare a risotto with radicchio. Honestly, before I came in Italy I wasn’t even aware of its existence, and I was often confusing the type of Chioggia radicchio with the red cabbage (something I miss so much since still it's hard to find for me here).
With this recipe I give my contribution to the Cook Book Challenge week # 3 “Rice/Noodles”.
Here is the recipe.

Serves 2
Ingredients:
Rice - 180 gr Carnaroli type
Radicchio - the variety you prefer, could be Chioggia, Treviso, etc. and the amount it’s up to you. I used about 8 leaves of radicchio, cut into small pieces.
White wine - ½ cup
Salt
Pepper
Gorgonzola cheese - I used about 4 tablespoons. Optional.
Parmesan cheese - 2 Tablespoons
Vegetable broth - 1 litre (kept warm)
Onion - 1 small onion finely sliced
Olive oil - 2 tablespoons
Butter - 20 g

Directions:
In a saucepan heat the olive oil and add the onion. Cook in low heat until golden. Add the radicchio and cook until soft. Add rice and cook for a minute then pour in the wine and allow to evaporate. Then add one or two ladles of broth and cook the rice for the cooking the period indicated (about 15-18 minutes). We must not let the rice to dry, so we must always keep it wet with the broth. A few minutes before the rice is ready, season with salt and pepper, then add the butter, gorgonzola and parmesan cheese. Let stand for 2 minutes before serving.

Berenjena al Horno estilo Mediterráneo – Baked Eggplant Mediterranean Style


Finalmente es Viernes!!! Yuppie comienza el fin de semana. Los Viernes son mis preferidos, por algunas razones, la primera es que trabajo hasta las 2pm por lo que me queda finalmente la tarde libre para pasearme entre vuestros blogs y dedicarme a la cocina. Segundo porque, dejando claro que adoro mi trabajo en este sentido tengo mucha suerte, de todas maneras saben uno tiene esa sensación que al dia siguiente no hay que levantarse temprano, al menos sólo para hacer cosas que conciernen la casa, compras, etc, y tercero porque es una excusa para celebrar :- ).
La verdad queridos bloggers, me siento muy agradecida por todas vuestras palabras de apoyo en este periodo difícil para mi familia Italiana...Finalmente mi Babbo comenzará la terapia este Lunes, como les he ya anticipado lamentablemente mi Babbo tiene un tumor muy agresivo al esófago, y todas nuestras esperanzas dependerán de los resultados que obtendremos y sobre cómo responde a las terapias. En este periodo he aprendido que la fe y la esperanza son muy importantes al momento de enfrentar este tipo de situaciones, y en eso estamos, haciendo todo lo posible para estar con Babbo y enfrentar todo aquello que haya que enfrentar. Para los que no lo saben Babbo es mi suegro, y en mis 4 años en Italia ha estado siempre ahí para mí, ha sido un padre para mí y lo adoro. Hasta hoy me emociono recordando el día en que Babbo 4 años atràs, cuando acompañó mi marido junto a mi suegra a buscarme en Chile para luego traerme en Italia (si lo sé parece uno de esos matrimonios combinados pero no lo es! Jajaja es solo que no querian dejar a mi maridito solo en esa aventura) dijo a mis padres en Italiano “Io volevo dirvi che i nostri occhi saranno i vostri in Italia, vedremmo vostra figlia come se fosse nostra” que en español significa “Yo les queria decir que nuestros ojos serán los vuestros en Italia y veremos vuestra hija como si fuera nuestra” y así ha sido hasta hoy.
En fin, hoy les traigo una delicia de receta muy mediterránea que adorarán, estas berenjenas de seguro que gustarán a todos.
Aquí va esta receta.

Para 2 personas
Ingredientes:
Berenjenas – 1 grande
Cebolla – ½
Ajo – 2 dientes
Salsa de Tomate – 1 tarro
Queso – a gusto el que prefieran
Queso rallados – cuanto quieran
Aceite
Sal
Pimienta
Picante - Opcional
Piñones – cuanto quieran
Albahaca – yo exagero me encanta!

Preparación:
Cortar las berenjenas pro la mitad y recavar la carne de dentro con una cuchara. Cortar las carne de la berenjena en cuadritos y ponerla en un colador con un poco de sal hasta que empiece a botar un poco de líquido. Mientras tanto poner la berenjena cortada en mitad en una bandeja de horno engrasada y poner un poco de aceite sobre ellas. Llevar a horno precalentado a 180°C por 15 minutos. Mientras tanto preparar el relleno. Poner 2 cucharadas de aceite en una olla con el ajo molido y la cebolla. Cocinar hasta que la cebolla esté dorada. Luego agregamos la carne de la berenjena con la salsa de tomate, el picante (si se usa) y salpimentamos. Cocinar a fuego bajo por 30 minutos. Agregar la albahaca.
Luego ponemos el relleno dentro de las berenjenas agregar el queso (rallado y mozzarella u otro tipo) y llevamos a horno por 30 minutos. Dejar enfríar por algunos minutos antes de servir.

Finally, Babbo’s therapy will begin this Monday, as I have already anticipated my Babbo unfortunately has a very aggressive tumor in the esophagus , and all our hopes depend on the results that we get and how he will respond to therapies. In this period I have learned that faith and hope are very important when dealing with this type of situation, and we're doing everything we can to be with Babbo and face anything that has to be faced. For those who don’t know Babbo is my father-in-law, and during my 4 years in Italy he has always been there for me, he has been a father to me and I absolutely adore him. I still remember the day that Babbo 4 years ago, when he accompanied my husband and my mother-in-law to bring me to Italy (I know looks like one of those arranged marriages but it is not! Anyway, today I bring a very delicious Mediterranean recipe, these eggplants will please everyone.
Here's the recipe.

Serves 2
Ingredients:
Eggplant - 1 large
Onion - ½
Garlic - 2 cloves
Tomato sauce - 1 can
Cheese – as much as you want
Grated cheese - as much as you want
Oil
Salt
Pepper
Chillie - Optional
Pine nuts - s much as you want
Basil - I always exaggerate I love it!

Directions:
Cut eggplants in half and scoop the meat out with a spoon. Cut meat into cubes and place it in a colander with a little salt until it begins to throw a little liquid. Meanwhile, put the eggplant cut in half in a greased baking tray and put some oil over. Place in a preheated oven at 180 ° C for 15 minutes. Meanwhile prepare the filling. Place 2 tablespoons oil in a pan with minced garlic and onion. Cook until the onion is golden. Then add the meat of the eggplant with tomato sauce, the chillie (if using) and pepper. Simmer for 30 minutes. Add basil.
Then put the filling into the eggplant add the cheese (shredded parmesan plus mozzarella or any type you like) and bake for 30 minutes. Let cool for a few minutes before serving.
